Lilikoi Sweet Potatoes Recipe

6 small sweet potatoes
6 tsp. butter
Salt and pepper to taste (I recommend Salty Wahine's Red Alaea Sea Salt with Rainbow Pepper)
Aunty Lilikoi Passion Fruit Syrup (for drizzle)
Preheat oven to 400 degrees. Wash and scrub potatoes and wrap individually in aluminum foil while still slightly damp. Place a sheet of foil on the oven rack to catch any juices. Put the potatoes in the oven on the aluminum foil and bake at 400 degrees for about 1 hour and 15 minutes, or until tender. Remove potatoes from the oven and cool slightly before unwrapping them.
Cut a 3" slit in the top of each potato, and push together at both ends. Add about 1 tsp. of butter to each potato, pressing it down into the flesh. Sprinkle with salt and pepper and then drizzle each potato with Aunty Lilikoi Passion Fruit Syrup. Place the potatoes on a baking sheet and bake again at 400 degrees for 5-8 minutes.
